Edinburg is living up to its “Destination City” label by opening more businesses.
City leaders and business owners gathered up for the groundbreaking ceremony of a new Bob’s Steak and Chop House. The 9,000 square foot restaurant will be built at the Shoppes at Rio Grande Valley.
Restaurant officials say they’re looking forward to see how well the restaurant will do with all the entertainment venues coming to the city.
Peter Higgins, Operating Partner for Bob’s Steak and Chop House said, “So much has grown in the last two or three years around the peripheral here. Our vision of this site is coming to fruition. This is an entertainment corridor. That’s one of the reasons we’re doing this restaurant plaza, to work in conjunction with the two new sports venues.”
An opening date hasn’t been set, but restaurant officials expect to open in the spring.
